The Art of Butchery
Art can be found beyond just the painter’s brush or sculptor’s chisel. Master butcher Andrew Sharp will be demonstrating four decades of experience of creating beautiful products from amazing meat.
With new season lamb just hitting its peak, this year, Andrew – who lead the Mutton Renaissance campaign – will be returning to Heckstall & Smith to butcher a lamb, hogget (a one- to two-year-old sheep) and mutton. The session will take you through how to create beautiful joints and how aged changes a sheep. Brockley Brewery beer will be available with all profit going to the festival.
